• 50g butter, softened
  • 90g caster sugar
  • 1 large egg
  • 2 ripe bananas, mashed
  • 110g self-raising flour
  • 1 tsp baking powder
  • 2 tbsp milk
  • 1 bag Pecan nuts
  • 1 tsp Cinnamon


  1. Line a 1lb loaf tin with parchment paper
  2. Preheat oven to 170C
  3. Mix butter and sugar
  4. Add flour, baking powder and Cinnamon and mix for a minute
  5. Mash bananas, chop Pecan nuts and add to mixture
  6. Mix together for another minute
  7. Add mixture to the loaf tin and bake for ~50 minutes
  8. The loaf will be ready once you can insert a knife and have it come out cleanly
