Braised Leeks (4)
Ingredients
- leeks
- olive oil
- garlic
- fresh thyme
- butter
- white wine
Method
- olive oil in pan at high heat
- chop leeks into 4inch sections
- add to pan and season
- wait until browned on contact surface and then rotate
- add butter, crushed cloves of garlic and fresh thyme
- add white wine and bring up to the boil
- as the wine reduces add more butter
- turn heat down, almost cover pan
- leeks will take 12 minutes to cook
