Braised Leeks (4)


  • leeks
  • olive oil
  • garlic
  • fresh thyme
  • butter
  • white wine


  1. olive oil in pan at high heat
  2. chop leeks into 4inch sections
  3. add to pan and season
  4. wait until browned on contact surface and then rotate
  5. add butter, crushed cloves of garlic and fresh thyme
  6. add white wine and bring up to the boil
  7. as the wine reduces add more butter
  8. turn heat down, almost cover pan
  9. leeks will take 12 minutes to cook
