Chicken Piccata (2)

Far too much lemon, burnt oil and the meat was too thick. Pretty shitty recipe

Ingredients

  • Chicken breast or boneless thigh
  • Butter
  • Mushrooms
  • Capers
  • White wine
  • Lemon
  • Parsley

Method

  1. Coat chicken in flour (then try to squash the meat flat), season
  2. Brown each side in a pan with olive oil and butter (don't burn the oil/butter otherwise it will become very bitter)
  3. Remove chicken from pan
  4. Add mushrooms to pan
  5. Brown mushrooms
  6. Add capers
  7. Return chicken to pan
  8. Addd 4oz chicken stock and 3oz white wine
  9. Simmer for 7 minutes
  10. Add squeeze of lemon
  11. Serve with parsley
