Chicken Piccata (2)
Far too much lemon, burnt oil and the meat was too thick. Pretty shitty recipe
Ingredients
- Chicken breast or boneless thigh
- Butter
- Mushrooms
- Capers
- White wine
- Lemon
- Parsley
Method
- Coat chicken in flour (then try to squash the meat flat), season
- Brown each side in a pan with olive oil and butter (don't burn the oil/butter otherwise it will become very bitter)
- Remove chicken from pan
- Add mushrooms to pan
- Brown mushrooms
- Add capers
- Return chicken to pan
- Addd 4oz chicken stock and 3oz white wine
- Simmer for 7 minutes
- Add squeeze of lemon
- Serve with parsley
