Chilli Minted Mushy Peas (6)
Ingredients
- 1 tsp olive oil, some butter into frying pan
- finely chopped shallot
- chillie chopped
- garlic chopped
Method
- add all into pan and sweat off
- boil some water in a pot
- add mint (including stalks)
- add frozen peas
- when they go soft, drain from pot, remove mint
- add peas to shallots in pan
- mix everything together, season with salt and pepper
- move pan onto wooden board and crush peas with masher
- serve on plate and top with chopped mint
