Halibut Steaks (5)
Ingredients
- Halibut Steaks
- Garlic
- Red Chillies
- Ginger
- Balsamic Vinegar
- Lime
- Small Tomatoes (e.g. Cherry)
- Olive Oil
Method
- Coarsely chop garlic, finely slice ginger, deseed and finely chop chillies
- Grind together in pestle and mortar along with some coarse salt, olive oil and balsamic vinegar
- Empty mixture into a bowl and add some chopped tomatoes
- Stir together and cover marinade with cling film. Leave in fridge for an hour or so
- Spread marinade onto halibut, cover with cling film and leave in fridge for a few hours
- Remove marinade from halibut and set it aside
- Lightly season fish with some salt and pepper.
- Heat a pan to medium/high, add some oil and cook halibut steak for ~6 minutes on each side (second side maybe less). Don't move the fish on the pan, when it's time to turn it around it shouldn't stick to the pan
- Move fish onto a plate and keep warm in the oven
- Lower the pan to a low/medium heat and add the reserved marinade
- Stir this around to pick up the flavours from the pan. Cook until the garlic is done then season or add some soy sauce/fresh lime/balsamic vinegar according to taste
- Serve the fish with the heated marinade
