Halibut Steaks (5)

Ingredients

  • Halibut Steaks
  • Garlic
  • Red Chillies
  • Ginger
  • Balsamic Vinegar
  • Lime
  • Small Tomatoes (e.g. Cherry)
  • Olive Oil

Method

  1. Coarsely chop garlic, finely slice ginger, deseed and finely chop chillies
  2. Grind together in pestle and mortar along with some coarse salt, olive oil and balsamic vinegar
  3. Empty mixture into a bowl and add some chopped tomatoes
  4. Stir together and cover marinade with cling film. Leave in fridge for an hour or so
  5. Spread marinade onto halibut, cover with cling film and leave in fridge for a few hours
  6. Remove marinade from halibut and set it aside
  7. Lightly season fish with some salt and pepper.
  8. Heat a pan to medium/high, add some oil and cook halibut steak for ~6 minutes on each side (second side maybe less). Don't move the fish on the pan, when it's time to turn it around it shouldn't stick to the pan
  9. Move fish onto a plate and keep warm in the oven
  10. Lower the pan to a low/medium heat and add the reserved marinade
  11. Stir this around to pick up the flavours from the pan. Cook until the garlic is done then season or add some soy sauce/fresh lime/balsamic vinegar according to taste
  12. Serve the fish with the heated marinade
