Kidney Bean Stew (6)
Ingredients
- 1 Onion - diced
- 1 Carrot - finely diced
- 1 Red pepper - diced
- Pancetta
- 1 Tin of Kidney beans
- 1 Tin of Tomatoes
- Chicken stock
- Paprika
- Chipotle Chilli Flakes
- Harissa spices
- Oregano
- Bay Leaves
- Flat leaf parsley
Method
- Set the Instant Pot on Saute and fry the onion for around 5 minutes in olive oil
- Add the pancetta to the pot and fry until it looks edible
- Add the red pepper and carrot, continue frying for 5 minutes
- Add Bay Leaves, 1 tbsp of Paprika, 1.5tbsp of Chilli flakes, 1.5tbsp of Harissa spices
- Add the tin of Kidney Beans, ΒΌ tin of water/stock to the Instant Pot
- Cover the Instant Pot and set the timer for 15-18 minutes
- Uncover, remove Bay Leaves, add the tin of tomatoes, the oregano and stir
- Cover the Instant Pot and set the timer for 4 minutes
- Add parsley and serve with brown rice
