Ingredients

  • 1 Onion - diced
  • 1 Carrot - finely diced
  • 1 Red pepper - diced
  • Pancetta
  • 1 Tin of Kidney beans
  • 1 Tin of Tomatoes
  • Chicken stock
  • Paprika
  • Chipotle Chilli Flakes
  • Harissa spices
  • Oregano
  • Bay Leaves
  • Flat leaf parsley

Method

  1. Set the Instant Pot on Saute and fry the onion for around 5 minutes in olive oil
  2. Add the pancetta to the pot and fry until it looks edible
  3. Add the red pepper and carrot, continue frying for 5 minutes
  4. Add Bay Leaves, 1 tbsp of Paprika, 1.5tbsp of Chilli flakes, 1.5tbsp of Harissa spices
  5. Add the tin of Kidney Beans, ΒΌ tin of water/stock to the Instant Pot
  6. Cover the Instant Pot and set the timer for 15-18 minutes
  7. Uncover, remove Bay Leaves, add the tin of tomatoes, the oregano and stir
  8. Cover the Instant Pot and set the timer for 4 minutes
  9. Add parsley and serve with brown rice
