Light Sweet Chilli Sauce (5)
Ingredients
- red chilli, chop and keep the seeds
- 2 cloves garlic, thinly sliced
- pinch of salt
- teaspoon of sugar
- fish sauce 2 tbsps
- rice wine vinegar (upto 1 tbsp)
- 3 tbsp olive oil
- spring onions
- coriander
- fresh lime
Method
- grind together the chillis, garlic, salt and sugar in a pestle and mortar
- mix in the fish sauce, rice wine vinegar and olive oil
- add spring onions (for texture and crunch)
- add coriander
- squeeze in fresh lime (goes well with fish)
- pour into a bowl and let it sit there (the longer the better)
