Light Sweet Chilli Sauce (5)


  • red chilli, chop and keep the seeds
  • 2 cloves garlic, thinly sliced
  • pinch of salt
  • teaspoon of sugar
  • fish sauce 2 tbsps
  • rice wine vinegar (upto 1 tbsp)
  • 3 tbsp olive oil
  • spring onions
  • coriander
  • fresh lime


  1. grind together the chillis, garlic, salt and sugar in a pestle and mortar
  2. mix in the fish sauce, rice wine vinegar and olive oil
  3. add spring onions (for texture and crunch)
  4. add coriander
  5. squeeze in fresh lime (goes well with fish)
  6. pour into a bowl and let it sit there (the longer the better)
