Ingredients

  • red chilli, chop and keep the seeds
  • 2 cloves garlic, thinly sliced
  • pinch of salt
  • teaspoon of sugar

Method

  1. grind together in pestle and mortar
    • fish sauce 2 tbsps
    • rice wine vinegar (upto 1 tbsp)
    • 3 tbsp olive oil
  2. spring onions (for texture and crunch)
  3. coriander
  4. fresh lime (goes well with fish)
  5. pour into a bowl and let it sit there (the longer the better)
