Method (from memory)
- Take chicken out of fridge and leave in kitchen for around an hour, it should be at room temperature.
- Heat oven to 190C/fan 170C/gas 5.
- Season inside of chicken with salt
- Quarter some lemons, onions. Stuff inside chicken along with some rosemary and thyme. The cavity should be filled
- Rub butter all over the chicken
- Roast for 1hr 20-30 minutes, basting it around twice.
