Method (from memory)

  1. Take chicken out of fridge and leave in kitchen for around an hour, it should be at room temperature.
  2. Heat oven to 190C/fan 170C/gas 5.
  3. Season inside of chicken with salt
  4. Quarter some lemons, onions. Stuff inside chicken along with some rosemary and thyme. The cavity should be filled
  5. Rub butter all over the chicken
  6. Roast for 1hr 20-30 minutes, basting it around twice.
